Vitamin D
Vitamin D is necessary for the body to [take up] calcium and [fosfor].
You can get this vitamin from fat fish, eggs, liver, margarine and milk,

I found one recipe at "SOAR: Searchable Online Archive of Recipes", but
I don't know if it's any good, or if it's even the right kind of bisquits.
I do have one good recipe, but the book it's in isn't available to me
right now. Unless I can find another on-line recipe on a page that's
definitely written by a Swede this one will simply have to wait until
after Christmas.
(Note: ginger bread dough needs to rest over night, so if you want to
have finished bisquits on Lucia morning (the 13'th) you'll have to start
today!)

12 December, Lussekatter
IIRC, at school (ca 3'rd grade) we were taught that "lusse" might refer
to either Saint Lucia or Lucifer. "Katter" is Swedish for "cats". Lucia
is celebrated on the 13'th (i.e. tomorrow) and that is when you eat those
bisquits that you should have started preparing yesterday, and these buns.
Unlike yesterday's recipe, this one is an old and well-tried recipe which
I have used many times. It comes in two variations, one for ordinary cinnamon
buns, and one for lussekatter. The lussekatt-recipe is half as big as the
ordinary bun recipe because 1. you basically have to eat them all in about
two weeks (it's a Christmas thing) and 2. they're a bit drier than ordinary
buns, which means you get tired of them quicker.

The first section describes the dough, which you make the same way
you usually make dough (this depends on what type of yeast you use).
Just throw in the raisins with the flour. It doesn't matter if some
of them get crushed and some remain whole. They're there to add some
moist to the buns (which, as I said, can get quite dry since there
is practically no filling in them). If you want really yellow buns,
use 1 g saffron (this seems to be the popular way to do it, but I
prefer just 0.5 g).
The second section is the filling.
For cinnamon buns: roll out 1/4 of the dough until it is ca 5 mm
thick. Try to make it fairly square. Pour on melted margarine and
spread it with a brush. Add cinnamon, sugar and grated marzipan.
Don't hold back! Lots of filling means less dry, more tasty buns.
Use as much as you can without it dripping out of the buns.

Roll up into a cylinder (this is where you see why you should try
to make it square) and cut off into ca 20-25 buns.

Place the buns in bun papers on a baking tin. Brush with eggs and
put sugar (very coarse sugar, which I haven't found an English word
for) and chopped almonds on them.
Finally, bake in the oven (temperature 200C).
Vanilla buns: these are cinnamon buns where the cinnamon has been
exchanged for vanilla.
Lussekatter: leave the rolling pin in the cupboard. You won't need it.
Take a little bit of dough (suitable for one bun) and roll it into a
little "snake".

so that the raisins get hidden in the middle of each "roll".

Place the buns on greaseproof paper on a baking tin. Brush with eggs

There are other ways to shape these buns. For example:

and the bigger the chance that you will be thoroughly fed up with
them before getting through even one!

right now, but...) Anyway, you can improve them very much by giving
them a few seconds in the microwave oven before serving them]
13 December, Glögg for Lucia
Translations from the web: "mulled wine" "Spicy Hot Red Wine" (also
this one. Note how these two sites suggest a good place to get some
of this stuff without having to make your own), and of course the
usual American misspelling. I've never made glögg, only bought it,
but it goes very nicely with the ginger bread and lussekatter I have
presented here in last couple of days. You serve glögg with raisins
and almonds (just stuff a suitable amount into a cup full of warm glögg).
Of course, you must have noticed my little hints about Lucia being
today, but perhaps not quite understood the significance of it. Lucia
is like "Christmas before Christmas", especially for the children.
This is when people have Christmas parties at schools, or at work.
Children are taught Lucia and Christmas songs which they sing in
special Lucia shows, in school in front of the other children (and/or
parents!), in recreation centres, in churches, etc, etc, etc. This is
one of the Big days of the year for any choir. The preparations of
costumes, rehearsing songs, choosing who is to be Lucia this year
(cruel "Miss Universe" type stuff!) and making those buns and bisquits,
keep the kids (and many grown- ups) busy for days and weeks before
Lucia.
